cucumber-peach gazpacho

one English cucumber, roughly chopped

½ sweet onion, peeled and roughly chopped

one garlic clove, peeled and minced

one bunch arugula, stems removed

four ripe peaches, peeled, pitted and roughly chopped

1 tsp sugar

2 tbsp red wine vinegar

salt and pepper to taste

 

Get out the food processor, add the cucumber, onion and garlic, and blitz for a good minute or two, until everything is pretty much pureed. Add arugula and blitz again. Add peaches, sugar, vinegar, salt and pepper, and whirl it a couple of minutes more, or until soup is totally smooth. Taste for seasoning and adjust as needed.
