  1. This one was requested and again is really easy. Apples Sugar Small amount of water 1 clove Peel and slice the apples and place in a saucepan with a small amount of water and the sugar, add a clove. Cook over a low heat until the apple mixture is cooked - a few chunks of apple in the mix is good if you like it that way. remove the clove Get some frozen puff pastry, defrost a couple of sheets and cut into circles. You can choose the size of the pastie that you want to make and then double it for the circle diameter. Place the pastry circle on a board and then place a good amount of your apple mixture in the centre. fold each circle over to resemble a half circle and crimp the edges. sprinkle a little sugar (demerara sugar is great if you have it) over the top of each pasty. Cook in a moderate oven for about 20 mins or until the pastry is golden and has risen. You can eat them warm with cream or ice cream, or room temperature just as they are. When out of the oven
  2. Here is a recipe for lemon butter, it's easy to make and so good on lots of things. You can use it on toast as a spread, or put it in little tart cases with a dollop of cream on top, or like my daughter, just eat it straight out of the jar Recipe for Lemon Butter: 4 egg yolks 1 cup of sugar 100 grams butter or marg juice of 3 lemons rind of 2 lemons beat eggs with sugar and put in a saucepan with butter and lemon juice. Stir over low heat until the mixture is the consistency of honey , add the lemon rind. Store in jars in the fridge.

Over 1 tablespoon of cold water, sprinkle 1 tsp. of geletin - let sit for 1 minute to soften it. Add 2 tablespoons of boiling water and stir till it's clear Beat 2 cups HEAVY whipping cream (heavy is a MUST) with with 1 tsp of vanilla and 3 Tablespoons sugar till soft peaks form Pour in the geletin mix and beat until stiff Frost cake!!

This is a favourite of mine: 2 lamb shanks (or 1 for each person) 1 bunch baby carrots (peeled and chopped in large chunks) 2 onions - (peeled and chopped into quarters) 500ml vegetable stock 2 cups of red wine Fresh oregano 1 cup Fresh parsley (optional) tear into pieces 2-3 bay leaves 1) Brown the shanks in an large heavy saucepan, then add the stock before throwing in the carrots and onions. 2) Add the wine and herbs. Put the lid on and bring to a boil then lower the heat to a very slow simmer and cook for a minimum of 2 hours, but as long as 4 hours. 3) Serve with mashed potato, blanched green beans and the remainder of the red wine! Enjoy!

These Peanut Biscuits are really nice and from a recipe of my mothers. 1/4 cup Margarine ) 2/3 cup Sugar ) Cream together Then Add together and mix: 1 Egg 1 Heaped Cup Self Raising Flour 1-1/4 teaspoons Cocoa Pinch of Salt 1 cup of Raw Peanuts Place teaspoons of the mixture on baking tray with room to spread. Place in an oven preheated to 375-400C (190F) for about 10-15 mins. cool on a wire rack and keep in an airtight jar. (Note: cookies are done when they are just a little soft, if you leave them in the oven until they are harder they will be like bricks.)
  6. Here is a recipe I make fairly often and it's one I first tried in Papua New Guinea some years ago. I've adapted it a little but it's very close to how it is made in the islands. Take one firm pawpaw (papaya), cut it in half length ways and remove the seeds and about half the flesh. Put the flesh aside. Take approx 500g (1lb) best quality mince, you can use lamb, beef, veal or pork (mince is ground meat) 1 onion Garlic peas - corn kernels - a little birdseye chilli (seeds removed) The flesh of the pawpaw plus whatever other incredients you like - mix together and make a savoury mince. Once the savoury mince is cooked - place equal quantities in each half of the pawpaw. In a baking dish place the two pawpaw halves (stuffed with the cooked meat) and pour a little water into the dish to come about half way up the side of the dish. Cover with foil and bake in a moderate oven for about 40 minutes. Once cooked, serve the half pawpaw on a bed of basmati rice and serve. You can place slices of fruit such as pawpaw, melon and banana on the plate also. It's delicious and very easy to make
