Chocolate Chia Seed Pudding

This is something I made today and it was so good that I almost didn't want to put it back into the fridge (dangit!). Chia seeds are extremely healthy for you; but, don't eat too many your first time, your stomach will feel a bit funky after a few hours. Onto the recipe! 

Ingredients:

 

1 1/2 cup of Chia Seeds 
1 cup of milk (this can be any kind of milk - I used hemp milk, unsweetened) 

2 Tbps of Coconut Sugar (can be replaced with any kind of sugar or sweetener substitute)
2 Tbps of Cocoa Powder 
2 tsp of Peanut Butter (or any kind of nutty butter - I used walnut butter with banana extract) 
1 tsp of Coconut Oil

 

Directions:

 

Easy, really! All you do is pour the milk into the container, pour in your dry stuff (chia seeds, coconut sugar, cocoa powder) - stir until it all breaks down, dump in your peanut butter and coconut oil - stir for five to ten minutes. It seems like a long time, but it helps break everything up. Throw it into the fridge for a few hours (or even over night). The longer you leave it, the larger the chia seeds will become  - they will absorb all of that yummyness. Keeps for at least 3-4 days.
