Ultimate Beef Stew

Ingredient Checklist
1 pound lean ground beef
salt and pepper to taste
3 (15 ounce) cans dark red kidney beans
3 (14.5 ounce) cans Mexican-style stewed tomatoes
2 stalks celery, chopped
1 red bell pepper, chopped
1 medium potato, peeled and chopped to suit
1 cup chopped red onion
¼ cup red wine vinegar
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried parsley
1 teaspoon dried basil
1 dash Worcestershire sauce
½ cup red wine


Step 1: In a large skillet over medium-high heat, cook ground beef until evenly browned. Drain off grease, and season to taste with salt and pepper.

Step 2: In a slow cooker, combine the cooked beef, kidney beans, tomatoes, celery, red bell pepper, onion, potato and red wine vinegar. Season with chili powder, cumin, parsley, basil and Worcestershire sauce. Stir to distribute ingredients evenly.

Step 3: Cook on High for 6 hours, or on Low for 8 hours. Pour in the wine during the last 2 hours.

The ingredients tell me that could be really delicious, I am wondering why, especially as it's ground beef, (not cuts of a tougher beef such as gravy beef etc.) it needs to be cooked in a slow cooker on high for 6 hours, I'm thinking it would be a burned mess by then.

That is interesting, Nan. I didn't notice that until you mentioned the ground beef. It almost looks like a chili recipe.. But, it sounds delicious; I can almost smell it cooking.

I wondered if anyone would catch that. It was a Chili Recipe, but I do not put beans in my chili, so I played with it, added a few things, etc. and decided to make stew. 

It came out excellent.

As was said, very intriguing taste.
